Roasted Lentils

Enjoy this crunch treat on its own or use it add texture in salads

Serves: depends on use

Ingredients 

  • 1 cup cooked lentils
  • spray oil
  • Savory seasoning mix: cayenne pepper and paprika or curry powder, garlic powder, pinch of salt

Instructions

  1. Spread 1 cup of cooked lentils on a paper towel. Let them dry for an hour or so. Transfer to a baking sheet and spray lightly with oil
  2. Add seasonings
  3. Roast at 300 degrees F, stirring every 10-15 min, for 40-45 min
  4. Let cool
  5. Add to trail mix, salads, or snack on them as desired
